How I Changed My Diet After Breast Cancer and Dropped 55 Pounds Without Trying

By Opal McKnight-Kleinsasser

My dad used to say: "If you eat it, you're going to die. If you don't eat it, you're still going to die." He wasn't wrong. But after my breast cancer diagnosis, I made a decision: if I'm going to die, it will not be because of what I put in my mouth.

That decision changed everything.

EMPTYING THE CUPBOARD

When my naturopathic doctor told me I had to give away everything in my kitchen, it was hard. I had just come back from Jamaica with jerk seasoning, oxtail seasoning, browning, Maggi, all the things we grew up with. Boxes of patties. Curry powder by the pound.

She told me to throw it all away. After spending all that money, I couldn't do it. So instead, I called a friend over, emptied my cupboards, and gave it all away. Every last thing I was used to. Gone.

THE 55 POUNDS I NEVER TRIED TO LOSE

I didn't exercise. I didn't go on any formal program. I simply stopped eating the things I was used to, the jerk pork, the patties, the soda, the fried chicken, the processed everything, and I dropped 55 pounds.

Just like that.

Before the diagnosis, my left knee hurt me constantly. After changing my diet, the weight came off, the knee pain eased, and I felt better than I had in years.

GOING BACK TO BASICS

With processed options off the table, I had to go back to my roots, literally.

Coconut milk: I stopped buying the canned version and went back to grating coconut and making it myself. The difference is incomparable.

Curry powder: I learned to make my own from scratch, with herbs and spices, no additives. My husband says it's better than anything he's had before.

Pasta sauce: I started making my own in big batches, sometimes a dozen bottles at a time, and giving them away to friends. No preservatives, just real tomatoes and herbs.

I also learned to make almond milk, oat milk, and soy milk sweetened with dates or maple syrup. Homemade granola. Sesame seed snacks. Chickpeas and beans soaked overnight and pressure cooked the Jamaican way. Porridge cooked in coconut milk, loaded with raisins, pumpkin seeds, and chia seeds.

And herbs. I didn't know how much flavor herbs could bring until I was forced to learn. Now I put them in everything.

WHY NUTRITION MATTERS WITH CANCER

You cannot have cancer and keep eating the same way you always did. The processed foods, the excess sugar, the canned and packaged everything, these are the very things that fuel cancer's growth. You have to give your cells something to fight with.

Changing my diet didn't just help me lose weight. It helped me rebuild. It gave me energy, clarity, and a sense of pride, because for the first time in my life, I knew exactly what I was putting into my body.

I never knew I could make any of it. But when your back is against the wall, you find out what you're capable of.

Walk good, until next time.
